  1. Heat the oil in a large skillet over medium heat. Add the onion and mushrooms and cook until tender, about 5 minutes.

  2. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the skillet and cook until set, about 5 minutes.

  3. Sprinkle with cheese and parsley if desired and serve hot.
